I am on the latest version of MacOS and the most updated version of Spotify, and for some reason I still cannot see the option to start a jam.

You mentioned that the option to start a Jam is missing from your Desktop app, right? Have you tried to see if the same happens on your other devices? Have you tried another network connection? We would advise to try and clear your cached files, as we think that might have something to do with this issue.
