Do the mp3's show artwork in Windows Explorer?

Anyway you can edit all metadata and add artwork using mp3tag. Mp3tag - Download

No, some of my local mp3 files don't have any album art. Is there any way in Spotify to add/update these?

To add album artwork you have to use mp3tag or other metadata app. You can't add/change metadata using Spotify.
