Rather than choosing your fire stick as audio output from within Spotify on your iPhone, mirror your iPhone to your stick using airplay (via an airplay fire stick app such as airReceiver). This will actually run Spotify from your iPhones ne rather than the fire stick, and your volume buttons will work.
