I'm having a hard time figuring out the difference between Premium, Unlimited and Free access. I currently have the Premium because that was the only option available when I signed up to play Spotify on my mobile phone. If I downgrade can I still access all the same content on my mobile phone? Streaming my own selection of music or am I limited to just the radio feature of Spotify (on either unlimited or free)?

That is a hard question to answer.
If you want a single reason that I can think of, the mobile version costs Spotify more to run. Spotify on the desktop uses a unique (and rather amazing) p2p system to share tracks across the Spotify network, meaning load on Spotify's actual servers is reduced. It is the main reason you can stream without ever needing to buffer, but it also means that the desktop client uses upload bandwidth to share tracks.
That wouldn't really work in theory on mobile devices, plus it would eat battery because of the extra traffic, so on the mobile client, all tracks are streamed directly from the Spotify servers.

Unlimited on desktop/laptop hasn't changed so you still get ad-free listening. Mobile devices need a Premium subscription now for the full benefits, including uninterrupted listening.
Unlimited will give you ad-free listening only on the desktops and your mobile devices will effectively be on free. The table sets out the differences between free and premium on mobile devices.

The unlimited subscription does not exist anymore in most countries. That is probarly why it doesn't appear.
