My Question or Issue
I have been subscribing to the premium family package for a few years now, but recently i would like to replace one of the six users under my subscription. Was wondering how does the removed user backup/keep his playlist if he were to subscribe to another package?

When you remove a member from your Premium Family plan, they won't lose any saved content on their Spotify account, including music and playlists even if they change plans to Individual Premium.

We can confirm that the playlists and songs in the account of the current Family member will remain as they are regardless of the subscription just like @Billy-J said.
The only thing that will change after you remove the member is that they'll s tart receiving ads. Other than that, everything will stay as it is.
