I got premium Spotify this past week and it should be able to play offline but won't! It says Available offline but I think I messed up because I went for whole albums.. do I need to sync track by track?

Hi, and welcome to the community!

You should be able to put all the tracks into a single playlist then sync that playlist.

What OS, device, and Spotify version are you using? Also, how many songs are you trying to sync? As there is a 3,333 song limit per device on a max of up to 3 devices at any one time.
