Even though i like to hear people who are skilled on the guitar theres still a voice part mostly. But check out the genre post-rock there you have a good chance to find more instrumentals when it comes to rock. Here still some songs i remember:

You should definitely check out these below from Neil Rambaldi...

He's one of the great ones out there... Still lesser known, but has played with / worked with lots of names as an L.A. and N.Y.C. session guitarist including Lilian Garcia, Stu Hamm (from Joe Satriani / Steve Vai, etc.), Nuno Bettencourt (from Extreme / Rihanna), etc. Neil has two solo albums.
