I have to agree with @Soundofus I also tend to get bored of them when they try to replicate the original song, however, there is one album that I think completely nails the art of covering songs. It's the work of a guy called Adem, it's mainly him double tracking with guitars and other acoustic instruments and it's just breath-taking. I would recommend, Loro and Hotellounge but they're all great in their own little way.

Björk - It's Oh So Quiet

I love Adele's cover of To Make You Feel My Love. The song was written by Bob Dylan (who has recently won a nobel prize for literature for his lyrics!) and also recorded with Billy Joel. What i like about Adele's version is how fragile her voice sounds.
