This is a cool topic. I have a playlist full of covers. I love when bands take their own spin on songs from other bands and tribute/honor the original songs. 

There are so many good covers. I have to say I really like Deftone's cover of Lynyrd Skynyrd's Simple Man. The vocals add a special Deftones feel I love.

Spider Bait's cover/take on the song Black Betty is also just unique, upbeat, and cool.

Lastly, (I'm sorry I couldnt choose just one) I like Machine Head's version of Hallowed Be Thy Name (Iron Maiden). Both bands are amazing to me and the energy and take on this song is cool.

When thinking about covers, the first artist that comes to mind is the Glee cast, tbh! They have some really good covers, sometimes even better than the originals imo 🙂
