Are you trying to remove the audiobook by clicking on the green checkmark as seen on the screenshot here:
That should do the trick, but if the audiobook is still present in Your Library afterwards, I'd recommend testing this out in the mobile app if you were trying to remove it from the desktop app and vice versa. You can also perform a clean reinstall of the app to make sure you're running the latest version and to remove any damaged cache.
