Restored my phone from backup, Spotify said I used all 3 devices and erased the music on my phone.

Maybe it's counting this phone before erasing it as a device, and as another device after restoring it?

I don't know, but now I have to redownload thousands of songs.

What gives?

I can't find a list of my devices anywhere or else I'd remove whatever shouldn't be on there.
