I recently purchased a gift card for my roommate and accidentally had it emailed to MY address instead of his! Can I forward him the email, and will he still be able to set up his own account?

Yes that is no problem.

Some users do it exactly like you, to suprise the other person and just print it out.

The email adress is not important - he can still redeem the code for his account.
