How do I listen to complete symphonies (e.g. Beethoven's 7th Symphony, movements 1 through 4)?

The best way is to search for it and then pick an album from the results that has all four movements. "Best Of" compilations etc. usually only have one movement though. You could also search for certain performances with conductors you like, as these might be filed under the conductor or orchestra name, not the composer. Example with searching for Sir John Eliot Gardiner:
