The account name for my subscription on the invitations I send says that the people in my family have been invited by what should be my name, but is just a bunch of numbers and letters. I don't see anywhere to update the account owner profile name. Should it not say "you have been invited by [my name]"?

The Premium for Family invite email includes the name provided when the plan was initially set up and is not possible to be updated currently.
Keep in mind that, as you mentioned, this is only visible in the invites sent. This means that if the name of the plan's owner was entered incorrectly, it shouldn't affect how the plan works. However, you might want to give a heads up to your family members about it.
