First of all, you need to cancel your subscription through Google Play subscriptions page on Play Store. Once you cancelled the subscription, you can subscribe again on your Spotify account page and choose PayPal as a payment method, if it’s available in your country.

And, as for the account - no need to worry! You will only lose your Premium benefits temporarily when switching your payment method. Your account's content like playlists etc. will remain intact.

Hi! I'd like to transfer my account from Google Pay to a direct account, so I can use the 6-month gift card I have with you. When I cancel the Google Pay account and recreate it with Spotify for a family account, will I have to re-add all those, and will they lose their content? Or will they just be added to the account when I sign up directly with Spotify?

Thanks for joining the thread.
Unfortunately, Spotify gift cards can't be used for discounted plans like Premium Family, Duo or Student. If you'd like to change your current payment method, you need to use one of the available recurring ones on the Premium Family sign up page.
If your main goal here however is to take advantage of the 6-month gift card you have, I'm afraid this won't be possible, so you might consider giving it to a friend or a family member who's not already part of your Premium Family plan.
To answer your other question about the music saved in a Spotify account - it is no way connected to the subscription status, so rest assured that it is safe regardless of the current plan you're on.
