If this is happening across devices then we recommend starting with securing your account by logging out everywhere from the Account Page here. This is just in case you're logged into a different device that's being used by someone else and they're changing the playback.
If you'd like to take it a step further, you can even reset your password and take a look at this article to check how you can protect your account.

Unfortunately, logging out of all devices didn't fix it. It happens within not even a second of me pausing it so I believe it's more of a software issue than someone manually changing the playback.

Are you by any chance using a Bluetooth device such as an external speaker for example or do you have a speaker used by the household for instance where you've linked your account?
It'd be great if you could also send us a video recording showing how the music switches/plays on its own after you press pause. You can attach it to your next response via the Insert Video option in the post editor or upload it to Google Drive and share the link with us (make sure the video has the permissions for anyone to see it).
