I'm currently trying to redeem a gift card i purchased last night via amazon that just arrived today.
I'm trying to redeem a $99 gift card for a premium account for myself (no other special promotions or anything like that) I've tried redeeming it on both my laptop AND iPhone just for two different errors to pop up.
One iPhone it says "Something went wrong. Please try again, Or go to our support."
On my laptop it says "The CSRF token is invalid. Please try to resubmit the form."

Sorry to hear that!
You could try logging out of every device here. Also, make sure you log out from spotify.com too. Try clearing the cache and cookies one more time and then, give it another try.

Can you check if you have any add blocking software on your browser or in settings? If so please set this to off for the Spotify page.
Could you also try removing your payment information and then opening an Incognito window and trying again. You would need to enter your payment info after this though.

I have an update for you.
In this case I would ask you to take a look here it explains, gift cards can be bought only from leading electronic and retail stores. Unfortunately Amazon isn't an official distributor of Spotify gift cards.
In addition could you also check your receipt to see if the gift card was activated. If it wasn’t, I would recommend to return to the store and ask them to activate it for you.
